Perfect Pound Cake
1 cup (2 sticks) unsalted butter, at room temperature
2 cups granulated sugar
3 cups all-purpose flour
4 large eggs, at room temperature
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon salt
1 cup whole milk, at room temperature
Instructions:
Preheat the oven to 325°F (165°C). Grease and flour a 10-inch bundt pan or two 9x5-inch loaf pans.
In a large mixing bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture, alternating with the milk and beginning and ending with the flour mixture.
Mix until just combined, being careful not to overmix the batter.
Pour the batter into the prepared pan(s) and smooth the top with a spatula.
Bake for 60-70 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool in the pan(s) for 10-15 minutes before removing to a wire rack to cool completely.
