Heather's Lemon Cookie Recipe

Heather's Lemon Cookie Recipe

Ingredients:

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 egg

  • 1 tablespoon lemon zest

  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/4 teaspoon baking powder

  • 1/8 teaspoon baking soda

  • 1 and 1/2 cups all-purpose flour

  • 1/2 cup powdered sugar

Instructions:

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.

  3. Add the egg, lemon zest, lemon juice, and vanilla extract to the mixture and mix well.

  4. In a separate bowl, whisk together the salt, baking powder, baking soda, and all-purpose flour.

  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  6. Using a cookie scoop or spoon, form small balls of dough and roll them in powdered sugar.

  7. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.

  8. Bake the cookies for 10-12 minutes or until the edges are lightly golden brown.

  9. Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
